Cold environments represent a large part of the Earth biosphere and are populated by the so-called psychrophilic organisms. These organisms evolved several adaptation strategies, including the production of cold-active enzymes, which very often occur thermolabile. The study of these enzymes raises interest both in Protein Science, because of their peculiar structural and functional features, and in Biotechnology, due to their applications in “cold processes” of thermolabile compounds.
In this talk several aspects of cold-active enzymes are introduced, including their structural and molecular mechanisms of cold adaptation and examples of biotechnological exploitation.
